  • The blades are made of steel with a high carbon content, which gives them a sharp cutting edge and makes them easy to sharpen.
  • The name Yanagiba ‘willow blade’ originates from the fact that it is thin and long like a willow leaf, and is mainly used for cutting sashimi.
  • The blade is ‘single-edged’ and is therefore for right-handers only.
  • Compared to double-edged knives, single-edged knives have a better bite and sharper cutting edge, and chefs and serious cooks tend to prefer single-edged knives.
